Side Servings
Umxhaxha

This traditional Xhosa dish is a simple mix of squash – traditionally intyabontyi, an indigenous squash similar to pumpkin – and white mielies. It’s seasoned with nothing more that salt and a bit of sugar. It’s usually enjoyed alone by the bowlful, hot or cold. It’s also delicious alongside stew or grilled meat.
Ingredients
Method
- 400 g pumpkin, peeled and diced
- 200 g white mielies, cut off the cob
- salt, to taste
- 1 T brown sugar
Method
Ingredients
1. Place all the ingredients in a medium saucepan and add enough water to cover.
2. Cook over a medium heat for 10–15 minutes, or until the pumpkin is soft and the mielies are tender to the bite. Drain any excess water.
3 Mash the pumpkin to form a rough purée. Serve warm or cold.
