This quick turkey stir-fry comes with an array of sides for everyone to put together at the table.

Ingredients

Method
  • 2 T olive oil
  • 500 g Woolworths turkey mince
  • 1 x 400 g can Woolworths Mexican-spiced tomatoes
  • 20 g fresh coriander, chopped
  • 12 corn taco shells
  • sea salt, to taste
  • freshly ground black pepper, to taste
  • 2 avocados, smashed
  • 1 lime, juiced
  • 1–2 baby gem lettuces, finely shredded
  • 1 cup thick sour cream
  • 100 g strong Cheddar or mild mozzarella, grated
  • chipotle sauce, to taste

Method

Ingredients

1. Heat the oil in a large non-stick pan. Add the mince and fry for 1–2 minutes, or until it changes colour. Add the tomatoes and stir-fry for 5–8 minutes, or until the mince is cooked and the sauce reduced. Add the coriander and check the seasoning.

2. Heat the tacos according to package instructions. Turn the turkey-and-tomato mixture into a bowl and keep warm at
the table along with the tacos. Mix the avocado with the lime juice and seasoning.

3. Assemble the tacos at the table.
