The bee's knees is an old “Flapper” cocktail that seems appropriate now that we are (hopefully, finally) entering the new roaring 20s.

  • 4 T gin
  • 1–2 T dry vermouth
  • For the honey syrup:

  • honey
  • water
  • fresh ginger, to taste plus more to garnish

Method

Ingredients

1. Start with a standard martini: combine good gin and dry vermouth, then add honey syrup.

2. To make the syrup, simmer equal parts honey and water with fresh ginger until fragrant.

3. Shake the gin, vermouth and syrup over ice, pour into a chilled glass and garnish with strips of peeled ginger.
