- 2 oranges
- ¼ cup water
- 2 T sugar
- 1 chilli, chopped
- 2 t sesame oil
- 1 t fish sauce
- 1 T soya sauce
- 1 garlic clove, minced
- 15 g coriander
- 15 g mint

In a saucepan, simmer the juice of 2 oranges, ¼ cup water, 2 T sugar, 1 chopped chilli, 2 t sesame oil, 1 t fish sauce, 1 T soya sauce and 1 minced garlic clove for 10 minutes.
Add 15 g coriander and 15 g mint. Chargrill salmon skewers for 1–2 minutes, basting with the marinade as you cook.
Serve the skewers with any remaining marinade.
