Ingredients
Method
- 1 medium watermelon For the dressing, mix:
- 4 T capers roughly chopped
- 1 lemon, juiced
- 10 anchovies, roughly chopped
- 2 cloves garlic, finely crushed
- 1 red onion, finely chopped
- 4 T mint roughly chopped
- 4 T Italian parsley roughly chopped
- 1/4 cup red wine vinegar
- ground pink peppercorns, to taste
- ground black peppercorns, to taste
- salt, to taste
- 50 g pecorino grated
- 1/4 cup extra virgin olive oil
Method
Ingredients
Cut the watermelon into thick slices, then cut out stars using a cookie cutter. Arrange on a large serving platter and drizzle with the dressing.
