Savoury rice
Why break the bank this festive season with exotic ingredients? Your pantry has the underrated ingredient that can take you from main to dessert: rice. Using Spekko rice, make the only savoury rice recipe you'll ever need. It's the perfect side for your festive menu, a braai or midweek dinner.
Ingredients
Method- 2 T olive oil
- 2 T unsalted butter
- 1 onion, finely chopped
- 1 t minced garlic
- 400 g can Woolworths diced tomatoes
- 2½ cups Woolworths fresh liquid vegetable stock
- 1 t smoked paprika
- 2 t sea salt
- 1 cup Spekko rice

1. Heat the olive oil and butter in a pan that you have a lid for, and add onion and garlic. Cook over medium-low heat, stirring occasionally until soft and slightly golden.
2. Empty the can of tomatoes into a bowl and top with enough vegetable stock to make its total weight 700 g. Whisk in the paprika and sea salt.
3. Add the rice to the pan with the onions, and stir to coat in the oil. Once coated, add the tomato mixture, cover with a lid and bring to a simmer.
4. The rice is ready to serve once all the liquid has been absorbed and the rice is soft. Serve with protein of choice.
