- 2 T olive oil
- 2 cloves garlic
- 1 onion, finely chopped
- sea salt and freshly ground black pepper, to taste
- 70 g Woolworths tomato paste
- 1 kg Woolworths free-range lamb mince
- 2 cups red wine
- 410 g can Woolworths whole peeled tomatoes
- 410 g can Woolworths diced tomatoes
- 1 Parmesan rind
- 2-3 bay leaves
- 1 cup Parmesan, grated
- 250 g pack Woolworths fresh fettucine
Method
Ingredients
1. Heat the olive oil in a large pan over a medium-high heat. Sauté the whole garlic cloves and onion for 3–5 minutes, or until slightly browned. Season with salt and pepper.
2. Add the tomato paste and cook for 2 minutes. Break up the lamb mince and add to the pan. Use a spatula or wooden spoon to break up the meat as it cooks – it should take about 8 minutes for the meat to brown properly.
3. Deglaze the pan with the red wine and reduce the liquid by half. Add the tomatoes, Parmesan rind and bay leaves. Simmer over a low heat for 10 – 15 minutes, or until thick and rich. If necessary, add water to prevent the pan from going dry.
4. Bring a large pot of salted water to a rolling boil and cook the pasta for 2–3 minutes, or until al dente.
5. Remove the pasta from the water and place directly into the sauce. Toss well and season again. Sprinkle with the grated Parmesan and serve immediately.
