Prawn salad on garlicky toasted ciabatta

Ingredients

  • 2 cloves, finely chopped
  • 3 T olive oil
  • 4 ciabatta slices
  • 1 cup good-quality mayonnaise
  • 1 galic clove, grated
  • 1 lemon
  • 300 g Woolworths peeled-and-cooked prawns, roughly chopped
  • Ground black pepper

Method

Ingredients

Mix 2 finely chopped cloves garlic with 3 T olive oil and brush onto 4 slices ciabatta.

Toast until golden brown on both sides. Mix 1 cup good-quality mayonnaise, 1 clove garlic, grated, and a squeeze of lemon juice with 300 g roughly chopped Woolworths peeled-and-cooked prawns.

Top the garlic bread with salad leaves and the prawn mixture. Season to taste with black pepper before serving.
