Ingredients

600–800 g Woolworths rotisserie chicken, chopped into chunks
4 plums, diced
2 cobs sweetcorn, kernels sliced off the cob
100 g red salad onions, sliced
350 g Woolworths exotic tomatoes
1 x 250 g Mediterranean cucumber, diced
1 large carrot, peeled and diced
35 g Woolworths nut-and-seed sprinkle
40 g Woolworths baby spinach, rocket and watercress salad, washed
sea salt and freshly ground black pepper, to taste

For the dressing, whisk:

½ cup Woolworths carrot-and-orange juice
1 T wholegrain mustard
4 T extra virgin olive oil
8 g fresh coriander
1 bird’s-eye chilli, finely chopped

1. Arrange all the ingredients on a serving platter and pour over the dressing. Serve immediately.
