Ostrich frikkadel traybake

This hearty traybake brings big flavour with minimal effort. Caul fat-wrapped ostrich frikkadels are roasted until golden, and nestled into a medley of chickpeas, pickled peppers, sundried tomatoes, olives and garlic. It’s all seasoned with smoky paprika, za’atar and olive oil, creating a richly spiced base. The creamy tahini yoghurt and herby basil mayo topping take it over the top – perfect for sharing, scooping or serving with warm flatbreads.

Ingredients

Method
  • 2 x 500 g Woolworths Ostrich Frikkadels in Caul Fat
  • 2 x 400 g cans Woolworths Chickpeas in Brine, drained and rinsed 
  • 245 g Woolworths Pickled Peppers, drained
  • 100 g Woolworths Sundried Tomato Quarters, roughly chopped 
  • 1 red onion, cut into wedges 
  • 1 head garlic, halved horizontally 
  • 100 g Woolworths Queen Olives, drained 
  • 2 T Woolworhts Za’atar Blend 
  • 1 T Woolworths Smoked Paprika 
  • 3 T Woolworths Italian Extra Virgin Olive Oil
  • sea salt, to taste 
  • Tahini yoghurt:

  • 1 cup Woolworths Double Cream Plain Yoghurt 
  • 2 T Woolworths Tahini 
  • 1 T fresh lemon juice 
  • sea salt, to taste 
  • To garnish:

  • 60 g Woolworths Fresh Basil Pesto Mayonnaise 
  • fresh basil 
  • fresh parsley, chopped 

Method

Ingredients

1. Preheat the oven to 200°C.

2. In a large roasting tray, combine the chickpeas, pickled peppers, sundried tomatoes, red onion, garlic and olives. Season with za’atar, paprika, olive oil and salt. Toss to coat evenly.

3. Nestle the ostrich frikkadels on top of the chickpea mixture. Roast for 35–40 minutes or until the meatballs are golden and cooked through, and the vegetables are lightly caramelised.

4. While the traybake cooks, whisk together the yoghurt, tahini, lemon juice and a pinch of salt until smooth.

5. To serve, spoon the tahini yoghurt over the meatballs and drizzle generously with Woolworths Fresh Basil Pesto Mayonnaise. Garnish with torn basil and chopped parsley.

Cook’s note: Serve with warm flatbreads, lemon wedges or quinoa for a complete meal. Leftovers are delicious cold the next day too!
