  • 50 g frozen berries
  • ¼ cup cream
  • 4 ready-made fruit mince pies, warmed
  • 1 T strawberry daiquiri pink sugar crystals, to sprinkle
  • 4 cups crushed-strawberries-and-cream ice cream

Method

Ingredients

Purée and strain the frozen berries, then add the cream and whisk until a light foam has formed.

Arrange the mince pies on a plate, sprinkle with the pink sugar crystals and top each with a small scoop of ice cream.

Serve with a dollop of berry foam.
