								- 2 T sunflower oil
 - 500 g beef mince
 - 2 t ground cumin
 - ½ t smoked paprika
 - 1 t ground coriander
 - sea salt and freshly ground black pepper, to taste
 - ½ a red onion, finely chopped
 - 2 garlic cloves, chopped
 - ½ a red pepper, diced
 - ½ a red chilli, finely chopped (optional if you\\\\\\\'re cooking for kids)
 - 125 ml chicken stock
 - 2 cobs sweetcorn
 - sour cream, for serving
 - guacamole, for serving
 - chopped spring onion, to garnish
 
Method
Ingredients
								Heat the oil in a pan over a medium heat.
Pan-fry the mince until brown. Add the cumin, smoked paprika, coriander and season to taste.
Add the onion, garlic, red pepper and chilli to the pan.
Simmer for 15 minutes – if the mixture is too dry, add the chicken stock.
Blanch the sweetcorn in salted boiling water until tender, then char on a griddle pan.
Serve the mince and corn with sour cream and ready-made guacamole.
Garnish with spring onion.
