Marinated tomato-and-mozzarella pizza

- olive oil, for frying
- 8 Woolworths slicing tomatoes, halved
- 400 g Woolworths Rosa tomatoes
- 400 g mozzarella, sliced
- 2 Woolworths stone-baked plain pizza bases
- sea salt and freshly ground black pepper, to taste
- fresh basil, for serving
- basil pesto, for serving For the tomato marinade, mix:
- ½ cup olive oil
- ¼ cup sherry vinegar
- 2 t sugar
- sea salt and freshly ground black pepper, to taste
Method
Ingredients
1. Preheat the oven to 200°C. Heat a little olive oil in a pan and char the halved tomatoes, cut side down, until caramelised. Place in a bowl. Repeat with the Rosa tomatoes.
2. Toss the charred tomatoes in the marinade and allow to stand for a few minutes. 3 Divide the mozzarella between the pizza bases, then top with the tomatoes. Bake for 10–15 minutes, season, slice and serve with the basil and pesto.
