Ingredients

  • 1 t bicarbonate of soda
  • 2 T milk
  • 2 medium apples, peeled, cored and grated
  • 75 g butter
  • 160 g sugar
  • 2 free-range eggs, beaten
  • 135 g cake flour
  • ½ t salt
  • 1 t baking powder
  • 195 g Nutty Wheat flour

Method

Ingredients

Preheat the oven to 180°C. Dissolve the bicarbonate of soda in the milk and pour over the apple.

Beat the butter and sugar well, then add the eggs. Sift the cake flour, salt and baking powder and add to the sugar mixture. Mix in the Nutty Wheat. Add the grated apple and mix.

Spray a 30 x 11 x 7 cm loaf tin with cooking spray and pour in the batter. Bake for 50–60 minutes, or until a skewer comes out clean.

Cook's note: I found this recipe in one of my mom’s handwritten recipe books and wasn’t sure if it is the one I remembered from childhood. But the moment I took my first bite of the hot bread, memories of sitting in the dark breakfast nook on winter after-school afternoons came flooding back. After all these years, the bread still tastes of care and duty and apples. “Maak mamma ’n broodjie?” (Is mommy making bread?) my son asked me with sweet surprise as I made this loaf. I think it’s best eaten straight from the oven, slathered with rapidly melting cold butter. Obviously.
