Iona Sauvignon Blanc 2013
Ingredients

- 1 medium red onion
- Salt, to taste
- ½ cup white balsamic vinegar
- ¼ cup freshly grated horseradish
- 2 T white wine vinegar
- Caster sugar, to taste
- ¼ cream, lightly beaten
- 1 crisp green apple, sliced
- Fennel leaves, to garnish
- 2 smoked mackerel fillets
Method

Slice the onion and place in a small bowl. Add a little salt and pour the balsamic vinegar over the onion. Stir and leave to marinate for 10 minutes.
Place the horseradish in a separate bowl with the vinegar, salt and caster sugar to taste, and stir to combine. Stir in the cream.
Place all the ingredients on a large platter and let everyone help themselves.
