Herby green butter



Just when we thought butter couldn't be improved, Instagram reminds us that flavoured butters are one of food’s greatest gifts. We’ve seen all kinds of flavours lately, from a herby butter to roast onion-and-miso and schmaltzy chicken skin butter topped with crispy chicken bits. Use it to baste grilled veggies or meat or smear over fresh bread.

Method
- 250 g butter
- 20–30 g a mix of soft herbs (parsley, basil, chives)
- 3 cloves garlic
- 1 lemon, zested and juiced
- Salt, to taste

Ingredients
Blend all the ingredients in a food processor. Check the seasoning and adjust if necessary.
