Green salad with strawberries and strawberry balsamic vinaigrette

Method
- 150 g fresh strawberries
- 120 g baby salad leaves
- 1 avocado, peeled and sliced
- 100 g soft goat’s cheese For the vinaigrette:
- 250 g fresh strawberries, hulled
- 4 T olive oil
- 4 T balsamic vinegar
- ½ t salt
- ¼ t ground pepper
- ¼ t dried tarragon
- ¼ t honey
Method
Ingredients
To make the salad, hull and slice the strawberries. Pile the baby salad leaves in a bowl and add the avocado, goat’s cheese and strawberries.
To make the vinaigrette, blend all the ingredients until smooth. Adjust the vinegar and honey until you get your preferred balance of sour and sweet.
Dress the salad with the strawberry balsamic vinaigrette and serve immediately.
