Ingredients

Method
  • 350 g Woolworths exotic tomatoes, some halved and others left whole
  • 200 g Woolworths barrel-aged Greek-style feta
  • 4 T parsley, roughly chopped
  • 1 red chilli, finely chopped
  • For the dressing, mix:

  • 2 garlic cloves, finely grated
  • 1⁄4 cup red wine vinegar
  • 1⁄2 cup extra virgin olive oil
  • Sea salt and freshly ground black pepper, to taste

Method

Ingredients

Place the tomatoes on a large serving dish, then drizzle over the dressing.

Cut or break the feta, then place on the tomatoes. Scatter over the parsley and chilli before serving.
