  • 1 pawpaw, cut in half
  • 1 medium-sized cucumber, peeled and sliced
  • 2 T walnut oil
  • 15 g coriander, chopped
  • 1 t tamarind paste, diluted with a squeeze of lemon juice
  • 1 T ginger, grated
  • 3 jalapeño chillies, chopped
  • sea salt and freshly ground black pepper
  • 1 x 80 g punnet pomegranate rubies, for scattering
  • 15 g mint leaves, for scattering

Method

Ingredients

Using a melon baller, scoop out rounds from the pawpaw. Place the cucumber in a mixing bowl then add the walnut oil, lemon juice, coriander, tamarind paste, ginger, chilli and pawpaw. Combine well and season to taste. Scatter with pomegranate rubies and mint leaves.
