Coconut ice

Ingredients
Method
- 400 g sugar
- 1⁄2 cup milk
- 120 g desiccated coconut
- Red food colouring, a dash
Method
Ingredients
Boil the sugar and milk for 8–9 minutes. Stir in the coconut and mix well. Press one half of the mixture into a greased dish.
Add a spot of food colouring to the remaining mixture and press it on top of the white layer. Cool and cut into bars.
