  • 250 ml sunflower oil
  • 4 free-range eggs
  • 250 ml buttermilk or plain yoghurt
  • 100 g sugar
  • 560 g self-raising wheat flour
  • 1 t salt
  • 200 g Cheddar cheese, grated

Method

Ingredients

Heat the oven to 180ºC.

Beat the oil, eggs, buttermilk or yoghurt and sugar* together.

Using a wooden spoon fold in the flour, salt and cheese. Do not overmix.

Spoon into well greased muffin trays and bake for 20 minutes or until golden brown.

*Cook's note: omit the sugar if you prefer a completely savoury taste. It won't affect the recipe.
