Best-ever guacamole



Did you know you can freeze your guac for up to 3 months? Just pop it in a container that seals well. Now you know what to do with all those extra avos you bought when they all ripen at the same time …
Ingredients
Method
- 3 ripe avocadoes, mashed
- Zest of 1 lime or zest of half a lemon
- Juice of 2 limes or one lemon
- Sea salt and freshly ground black pepper, to season
- 10 g fresh coriander, chopped
- 3 spring onions, finely chopped
- 1-2 green chillies, chopped
- 2 T sour cream
- Pink pickled onions, to serve
Method
Ingredients
1. Combine all of the ingredients (apart from the pickled onions) and mash together with a fork or in a pestle and mortar until you’ve reached the desired texture or consistency.
2. Serve with scattering of pink pickled onions to garnish.
Cook’s tip: If you are freezing the guacamole, make the recipe as above but omit the onions – these you’ll want to add fresh once you’ve defrosted the guacamole for use.
