Beer-brined ribs

For the brine, mix:
- 3 x 330 ml bottles beer
- 3 T salt
- 3 T brown sugar
- 1 T cayenne pepper
- 2 t freshly ground black pepper
- 1.5 kg pork or beef ribs
- 2 cups Woolworths sweet and sticky BBQ marinade
Method
Ingredients
Whisk the brine until the sugar and salt have dissolved.
Place the ribs in a deep baking tray and pour over the brine. Marinate in the fridge for 6 hours.
Remove the ribs from the baking tray and pat dry using kitchen paper.
Generously coat the ribs in the BBQ marinade. Heat a griddle pan until smoking and grill the ribs on both sides.
Cook's note: You can flavour the brine with almost anything. Try adding 4 T curry powder, 2 T cumin and 2 T turmeric, or 2 T adobo sauce for a spicy alternative.
