Basic pizza bianca

- ¼ cups lukewarm water
- 1 x 10 g yeast sachet
- 240 g cake flour
- 2 t salt
- 1 t sugar
- 4 T extra virgin olive oil For the topping:
- 3 T extra virgin olive oil
- 4 cloves garlic, roughly chopped
- 250 g fresh fior di latte cheese, torn into chunks
- salt, to taste
Method
Ingredients
Pour the lukewarm water into a small bowl, add the yeast and set aside.
Combine the flour, salt and sugar in a large mixing bowl. Add the yeast mixture to the dry ingredients, then add the oil. Mix until a dough has formed.
Knead for 5–10 minutes, then place in a well-oiled bowl. Cover and allow to rise for 30 minutes or until doubled in size.
Meanwhile preheat the oven to 180°C. Knock down the risen dough, place on a floured surface and roll out into a circle.
Spread the olive oil and garlic onto the pizza base, then add the cheese. Place the pizza on a baking tray and bake for 20–30 minutes, or until the dough is cooked and the topping is perfectly melted.
Season with salt to taste before serving.
