Ingredients

Method
  • Butter, for greasing
  • 12 leeks, washed and trimmed
  • 3 cloves garlic, crushed
  • 100 g Gorgonzola, crumbled
  • 1 x 400 g can white beans, drained
  • 8 rashers bacon, cubed
  • 1 cup cream
  • Sea salt and freshly ground black pepper

Method

Ingredients

Preheat the oven to 180°C.

Grease a baking dish with the butter then slice the leeks in half lengthways and arrange in the base of the dish.

Top with the crushed garlic, crumbled Gorgonzola and white beans, and scatter with the bacon. Drizzle over the cream and season to taste.

Bake for 30 to 45 minutes, until bubbling and golden. Add more cream if necessary.

Serve hot as a side dish or with crusty bread for dunking.

TASTE’s take:

Enjoy this decadent creamy, cheesy bake packed with sweet leeks on its own, or with roast chicken for Sunday lunch.
