- 1 x 200 g packet Woolworths streaky bacon
- 4 x 120 g Norwegian salmon portions
- 1 free-range egg, beaten
- 1 T olive oil, for frying plus, extra for drizzling
- 2 cups frozen peas
- 1 t fresh mint, chopped

Preheat the oven to 200°C. Pan-fry Woolworths streaky bacon in olive oil until very crispy. Blend or finely chop the bacon until its texture resembles breadcrumbs.
Dip the portions Norwegian salmon into the beaten free-range egg.
Generously pat the bacon onto the top of each portion. Heat the olive oil in a nonstick pan until very hot. Fry the fish skin-side down for 3–5 minutes, or until crispy. Finish in the oven for a further 2–4 minutes. Do not turn the fish.
Cook the frozen peas in salted boiling water for 3 minutes. Drain and coarsely mash using a fork, adding a drizzle of olive oil and chopped fresh mint. Season to taste and serve with the salmon.
