Atchar cheese toastie

Easy

Adding atchar to a cheese toastie might be the easiest way to turn a quick lunch into something next-level delicious. Make the atchar from scratch or use one of Woolies' atchars.

Ingredients

Method
  • 2 T vegetable oil
  • 2 free-range eggs
  • 50 g good-quality mayonnaise
  • 4 slices white bread
  • 60 g mozzarella, grated
  • 60 g Cheddar, grated
  • 60 g vegetable atchar
  • 30 g sriracha sauce
  • sea salt and freshly ground black pepper, to taste
  • 100 g salted butter

Method

1 . Heat a pan and add the vegetable oil. Fry the eggs until the yolks are done to your liking and set aside.

2. To assemble the sandwiches, spread each slice of bread with mayonnaise, then place some cheese, the egg, vegetable atchar, a squeeze of sriracha and a little more cheese on half the slices, then top each slice with the other slice of bread.

Alternatively, try Woolies mild or hot veggie atchar.

3. Heat a pan and add the butter. Grill the sandwiches in the pan until golden brown on both sides and the cheese has melted. Serve hot!
