Ingredients

- 4 T extra virgin olive oil
- 1 T smoked paprika
- 1 T garlic, crushed
- 1 T sesame seeds
- 1 t cumin seeds
- salt and freshly ground black pepper, to taste
- 4 large brinjals, peeled and quartered For the lemonade mayonnaise:
- 2⁄3 cup Woolworths vegan mayonnaise
- 1 lemon, zested and juiced
- sea salt and freshly ground black pepper, to taste
- 1 T brown sugar
- a few sprigs mint, plus extra for serving For the gremolata, mix:
- 10 g Italian parsley, roughly chopped
- 1 lemon, zested
- 1 orange, zested
- 1 t salt flakes
- 10 g mint, roughly chopped
Method

1. Combine all the ingredients except the brinjals. Pour the spice mixture over the brinjals and air-fry at 200°C for 20 minutes.
2. To make the lemonade mayo, blend all the ingredients in a food processor. Spread onto a plate and top with the baked brinjal. Spoon over the gremolata, scatter over the mint leaves, drizzle with olive oil and serve immediately.
