Method
    For the oats

  • ½ cup oats
  • 2/3 cup water, apple juice or almond milk
  • For the mousse, blend:

  • 1 ripe small avocado
  • 3 – 4 T cocoa powder
  • 2 T honey
  • ½ cup coconut milk
  • 1 banana, halved
  • 1 T butter
  • 1 t honey
  • blueberries, for serving
  • honey, for serving

Soak rolled oats overnight in the liquid of your choosing.

Drain oats before serving if needed.

To serve: swirl chocolate avo mousse in a plate, top with overnight oats, add warm caramelised banana, a dash of coconut milk, runny honey and blueberries to taste and dig in.
