1. Make the caramel sauce. Place the sugar and water over a medium heat. Allow to fully dissolve while stirring. Once dissolved, stop stirring and allow to boil until it turns an amber colour, like honey. Once a honey colour, add the butter and very quickly whisk into the caramelised sugar, being careful not to burn. Once fully incorporated, cook for 1 minute further.
2. Add the cream, being careful as it will bubble. Whisk until smooth sauce consistency. Whisk in the salt and allow to cool.
3. Toss through popcorn once cooled slightly to coat and tower over ice cream cones.
