Tomato-and-asparagus tart

1. Preheat the oven to 200°C.
2. Unroll 2 packs puff pastry and place on a large greased baking tray. Lightly brush one edge with beaten egg. Overlap the 2 sheets and press down lightly to seal.
3. Spread the onion marmalade onto the pastry, then crumble over the chevin.
4. Cover with the remaining 2 pastry sheets and brush with the remaining beaten egg.
5. Bake for 25–30 minutes, or until the pastry has risen and is golden.
