Amaretto-and-raisin coconut cassata

In a medium saucepan, combine the oats, coconut milk, cinnamon, nutmeg, salt and vanilla seeds. Cook for 10–12 minutes or until the oats are tender.
Sprinkle with the sugar and top with the apple.
Cook's note: Use coconut ugar if you prefer it to Muscovado
