
Makes 24 largish date balls
Easy
30 minutes, plus 1 hour’s chilling time
1. Chop the dates into smallish pieces if you haven’t managed to source the chopped variety. Roughly crush the Marie Biscuits so that there are both fine crumbs and smallish pieces.
2. Melt the butter in a medium saucepan. Add the dates and stir until they’ve softened.
3. Add a few tablespoons of the hot date-and-butter mixture to the egg and mix well. Add the egg mixture to the remaining date- and-butter mixture and mix well. Lastly, add the Marie biscuits and mix well.
4. Once the mixture has cooled slightly, roll tablespoonfuls into golf balls, then roll each one in the desiccated coconut and set aside. Chill for at least 1 hour before eating. (I like to keep mine in airtight plastic container in the fridge anyway.)
Cook's note: We buy the packets of ready-chopped dates in the cake aisle. Because: lazy.
