Chocolate oat porridge

1. Heat a pan and add 2 T oil. Fry the sausages until golden brown and cooked through. Set aside.
2. In the same pan, fry the onion until caramelised, then season to taste. Place the parsley, mustard, honey and 2 T olive oil in a blender and blitz until smooth.
3. In another pan, heat the remaining oil. Fry or scramble the eggs until cooked to your liking. To assemble, place slices of bread on a plate or board and top with the sausages, fried onions, eggs and parsley mustard. Serve with your favourite condiments.
