Loaded boerie rolls with pineapple salsa

1. Grill the sweetcorn over a high heat until golden brown and charred, then set aside. Combine the pineapple, oil, chilli flakes, paprika, lime juice and zest, salt and honey.
2. Pour over the hot sweetcorn and scatter with the coriander. Serve with lime wedges.
Cook's note: Tajin is a seasoning of Mexican origin from the company of the same name. Primarily made of ground chilli, dehydrated lime juice and salt, it’s as much a household name in Mexico as Aromat is in Mzansi. I used it in a pineapple salsa spooned over hot mielies
