Ingredients

For the pork

400 g pork fillet
2 T ginger, finely grated
6 cloves garlic, crushed
1 T brown sugar
4 T soya sauce
Oil, for frying

For the apple kimchi, mix:

½ medium red cabbage, finely sliced
½ cucumber, finely sliced
4 red spring onions, finely sliced
2 Granny Smith apples, cut into matchsticks
4 radishes, finely sliced
2 T Woolworths Mamma O’s Premium Super Spicy Pepper Paste
2 limes, juiced
1 T coriander, roughly chopped

Method

Slice the pork fillet into 4 pieces and place a piece between 2 sheets of clingwrap. Using a mallet or rolling pin, bash to a thickness of 5 cm. Repeat with the remaining pork.

Combine the remaining ingredients and marinate the pork in the mixture for 10 minutes.

Heat a little oil in a non-stick frying pan over a medium to high heat. Pan-fry the pork until golden and cooked through. Serve with the apple kimchi. (Or try this easy kimchi recipe.)
