Make pizza bases
Making your own pizza bases is a great way to keep the kids entertained and into the kitchen. Make a pile of pizza bases and freeze them, then simply whip out of the freezer and add your favourite toppings.
Method
Sift 1.4 kg cake flour and 1 T salt into a large plastic bowl. Add 11/2 T sugar and 4 x 7 g packets instant dry yeast.
Mix 4 T oil and 1 litre warm water and add to the flour. Mix to form a soft dough.
Turn out onto a large lightly floured surface and knead for 10 minutes until smooth.
Grease a bowl, add the dough, cover and place in a warm place to rise for about 30 minutes, or until doubled in size. Knock down with your fist (a slight punch) and knead until smooth.
Divide into about 10 to 12 balls and roll out thinly on a floured surface. Layer the pastry discs with clingwrap and freeze.
To use, brush with olive oil, sprinkle with dried oregano, spread with crushed canned tomatoes, garlic and salt and add your favourite toppings.
Finish off with grated mozzarella. Bake at 200°C until the base is golden brown and the cheese is bubbling.
