Make Napoletana sauce
A famous tomato sauce from Naples in Italy, Napoletana sauce is great over pasta with gratings of Parmesan.
Method
Brown a large chopped onion and a couple of crushed garlic cloves in olive oil.
Add a tin of chopped tomatoes (or use about 6 fresh tomatoes, blanched and skins removed) and cook until soft.
Add a pinch of sugar, a bay leaf, salt and pepper and a tablespoon of tomato paste and allow to simmer until well combined – about 1 hour.
