Mince pies with berry foam

- 50 g frozen berries
- ¼ cup cream
- 4 ready-made fruit mince pies, warmed
- 1 T strawberry daiquiri pink sugar crystals, to sprinkle
- 4 cups crushed-strawberries-and-cream ice cream
Method
Ingredients
Purée and strain the frozen berries, then add the cream and whisk until a light foam has formed.
Arrange the mince pies on a plate, sprinkle with the pink sugar crystals and top each with a small scoop of ice cream.
Serve with a dollop of berry foam.
