Roasted vegetables on toasted ciabatta

  • 1 packet of ready-roasting mixed Mediterranean vegetables
  • 1 packet of Parma ham
  • 1 ciabatta, halved and toasted
  • freshly ground black pepper, to taste
  • Maldon salt, to taste
  • extra virgin olive oil, for drizzle
  • fresh coriander, to garnish

Method

Ingredients

Roast the vegetables as per the cooking instructions. Or combine your choice of vegetables, sprinkle with olive oil and seasonings and roast at 180°C for about 40 minutes.
Place the vegetables and Parma ham on the toasted ciabatta halves, season, then drizzle with olive oil and sprinkle fresh coriander on top.
