- 1 cup coconut milk
- ¼ cup chia seeds.
- 2 t honey
- 1 t vanilla extract
- a pinch of salt
- Zespri Vita SunGold™ kiwi frui, for serving
- coconut yoghurt, for serving
- toasted coconut flakes, for serving
- pistachios, for serving
- 1 T nut butter
- 1 T granadilla pulp
- freshly grated coconut, for serving (optional)
- a drizzle of honey (optional)
Method

1. Pour coconut milk over seeds.
2. Add honey, vanilla extract and a pinch of salt. Mix well and refrigerate for 2 hours or overnight.
3. Top with slices of peeled Zespri Vita SunGold™ kiwi fruit, a scoop of coconut yoghurt, or Woolworths cultured coconut, toasted coconut flakes, pistachios, a teaspoon of nut butter, granadilla pulp, freshly grated coconut and a drizzle of honey (optional). Dig in!
