- 1 T olive oil
- 1 x 70 g sachet korma paste
- 1 x 400 can coconut milk
- 2 sprigs fresh curry leaves
- 600 g beef steak
- 2 T olive oil
- 400 g grilled brinjal
Method
Ingredients
Place a saucepan over a medium to low heat and add olive oil. When hot, add a sachet korma paste and fry for 10 seconds. Add a can coconut milk and whisk to combine.
Add sprigs fresh curry leaves and simmer for 10 minutes. Meanwhile, place a pan over a high heat. Rub beef steak with olive oil and sear for 2 minutes on each side.
Transfer to the coconut curry, along with grilled brinjal, and simmer for 5 minutes. Serve immediately.
Cook's note: Korma is a delicious Indian spice mix. You can buy it ready-made from Woolworths, or make your own korma paste at home.
