- 6 halved plums
- ¼ cup water
- 3 T sugar
- Red wine
- ½ cup sugar
- 1 handful pistachios
- vanillabean ice cream
- Pistachio sugar
Method

Poach 6 halved plums in water and sugar until just soft, then add a swig of red wine. Simmer for 3 minutes, then remove from the heat. In a separate saucepan, melt sugar, then add a handful pistachios.
Pour the mixture onto a silicon pad and allow to cool, then blend finely. Serve the plums with vanillabean ice cream and dust with pistachio sugar.
