Buttered apples with sour cream and lumpfish roe

								- 2 Pink Lady apples, sliced
 - 1½ T white sugar
 - Juice of 1 lime or ½ a lemon
 - 6 radishes, cut into strips
 - Sour cream, for serving
 - 50 g seaweed caviar

								In a nonstick or stainless-steel pan over a medium heat, add the butter and, when hot, sauté the apple slices on both sides until soft.
Sprinkle with a little sugar and squeeze over the lime or lemon juice. Simmer for a few minutes more, then remove from the heat and distribute amongst serving plates.
Top with a few strips of radish, add a dollop of sour cream and a spoonful of seaweed caviar and serve immediately.
