- 100 g sesame seeds, toasted
- 3 T soya sauce
- 1 x 5 cm piece fresh ginger, peeled and grated
- 1⁄2 cup good-quality mayonnaise
- 1⁄4 cup rice vinegar

Blend the sesame seeds in a blender to form a paste. Mix in the remaining ingredients and serve with chopped radish, steamed spinach or raw cabbage salad.
Cook's note:Goma-ae is a side dish of hot or cold vegetables with a creamy, tangy sesame dressing. I think of it as the Japanese equivalent of mayo or sriracha – it’s on supermarket shelves everywhere. I loved it with daikon but radish is a great alternative in this easy home-made version.
