Ingredients

- 8 Roma tomatoes, sliced lengthways
- 150 g Woolworths fresh fior di latte mozzarella, torn
- 100 g sundried tomatoes, quartered
- 16 black olives, smashed
- 10 g basil
- 2 stalks celery, roughly chopped
- 1 T dill, roughly chopped
- 3 T extra virgin olive oil
- 1 T white wine vinegar
- Maldon salt and freshly ground black pepper, to taste
