Isidudu is the perfect start to any day – it's filling and nourishing and you don’t need a whole lot to feel satisfied. There are so many ways to make it delicious, but it’s great on its own or with a dash of vinegar to emulate the fermented version.

  • 4 cups water 
  • salt, to taste 
  • 240 g maize meal or polenta 
  • brown sugar, to taste 

Method

Ingredients

1. Bring 2 cups water to the boil in a saucepan and add the salt. In a bowl, whisk together the maize meal and remaining water. Quickly whisk the maize meal-water mixture into the boiling water and stir, reducing the heat.

2. Cover and allow to simmer for 15 minutes or until the maize meal is fully cooked. Serve hot with sugar, or butter and milk if you like.
