Known as isjingi in isiZulu, umqa is a versatile dish that can be enjoyed any time. Serve with a knob of butter and a spoonful of sugar for breakfast with a difference.

  • 1 kg pumpkin, peeled and cubed
  • 4 cups water 
  • salt, to taste 
  • 2 T brown sugar
  • 240 g maize meal  
  • 100 g butter 

Method

1. Place the pumpkin and water in a large saucepan and cook over a medium heat for 20 minutes or until very soft.

2. Add thesalt and sugar. Using a stick blender, blend the pumpkin to make a purée. Transfer to a saucepan, then gradually whisk the maize meal into the pumpkin purée.

3. Cook over a medium-low heat for 30–40 minutes, stirring often with a wooden spoon until the maize meal is no longer coarse. Stir in the butter and check the seasoning. Serve warm.
