Make Cheat’s hollandaise
Owner of The Leopard, Andrea Burgener, reveals the secret to her cheat’s Hollandaise.
Method
Beat 3 or 4 egg yolks into 2–3 T fresh orange juice, then pour into a pan over a medium heat.
Add 130 g cold butter in little cubes, bit by bit, whisking continually until custardy.
Remove from the heat. If it looks like it might split add a little cold cream and keep whisking!
