Air-fryer baked chocolate chip protein oats

"This is my favourite way to start the morning, and it fills me up until lunch and more. I’ve recently got back into hitting the gym – not sure how long it will last – but I’m enjoying the routine of going to lift some weights. I try to go early in the morning, then afterwards, as soon as I’m back home, these protein-rich oats kick-start my recovery. Once done, I’m raring to go for the rest of the day." – Dean Edwards

Ingredients

  • 80 g rolled oats
  • 35 g protein powder
  • 1 egg
  • 1 small banana, peeled and chopped
  • 120 ml milk
  • 1 t cocoa powder
  • 30 g desiccated coconut
  • ½ t baking powder
  • a little vegetable oil, for the dish
  • 30 g chocolate chips
  • Biscoff biscuit spread, melted, to serve (optional)

Method

Ingredients

1. Preheat the air fryer to 180°C.

2. Blitz all the ingredients, apart from the chocolate chips, in a mini blender or food processor, then pour into a small greased baking dish measuring about 14 × 10 cm (51/2 × 4 inches), or two smaller individual dishes.

3. Scatter over the chocolate chips, then cook in the air fryer drawer for 8 minutes. I like to finish mine with a drizzle of melted Biscoff spread.

Cook's note: A little protein powder might not be an everyday ingredient, but it’s great for keeping you feeling fuller longer, as well as for eating after a workout, to help repair your muscles.
